Fried Squash and Stuffed Bell Peppers
The past couple days Amanda and I have been experimenting with some cooking.
We bought a whole lot of groceries and there was a lot of squash out on the shelves so I picked up some. Tonight I fried the squash with just 1 tbsp of vegetable oil. Used about a tsp of garlic salt. And fried it until blackness appeared on both sides, just like back home. That was really really good, something you can't find in a restaurant around here.
Amanda made stuffed bell peppers last night. We only used 2 1/2 cups of jasmine rice, half of a big sweet onion, a little over a pound of ground beef, and 3 small cans of tomato sauce. We basically sautee'd it all together and then stuffed the 4 peppers with it. We ended up using ketchup on tops of them to give them some salty flavor back. Next time we will probably mix some ketchup in with it, or get some salted sauce or something different.
Very good food.
